In my research I analyze the environmental impact of food from a consumer perspective in Mexico. To do this, I focus on the use of agricultural resources: land, water and energy. I link what people eat with how it is produced: so diets with agricultural systems. I study the interconnections among the different drivers of the food system. The most relevant drivers include the socioeconomic and demographic situation of the population, climatic conditions, agricultural practices and culture. I analyze changes in the past and differences among population groups to assess the future. Furthermore, I evaluate the trade-offs among the use of agricultural resources: e.g. land VS fertilizers, labour VS machinery.
