What does the perfect tiramisu reveals about chemistry?

This video is a chemistry class and a cooking show in one. Chemical Engineer Prof dr Francesco Picchioni of ENTEG explains what a colloid is and shows what this has to do with the famous Italian dessert Tiramisu.
