This video is a chemistry class and a cooking show in one. Chemical Engineer Prof dr Francesco Picchioni of ENTEG explains what a colloid is and shows what this has to do with the famous Italian dessert Tiramisu.

The video has been produced by the Universiteit van Nederland, a non-profit organisation devoted to giving the world access to the brilliant minds of the best teachers, most inspiring professors and amazing scientists.
