Vegan wheat bran milk possible soon?
Vegan milk made from wheat bran will soon be possible. Prof.dr Gert-Jan Euverink and Royal Koopmans starts a four-year research project under the umbrella of the Carbohydrate Competence Center (CCC) into new applications of wheat bran as a vegetable alternative for animal proteins.
The team will investigate how wheat bran can be used to produce vegetable meat and dairy products. Plant-based and less animal-based food is important for health and the environment. The research will contribute to the protein transition from carbohydrates.
