Privacy is about the safeguarding of user identity.
Security is about the safeguarding of data.
This means that, as a researcher working with human subjects, privacy relates to any rights your research subjects have to control their personal information.
Security relates to how their personal information is (technically) protected - but is equally an issue if you do not work with personal data at all.
The same distinction is roughly made where the GDPR refers to "organisational and technical measures" for data protection.
Organisational measures may consist of internal policies, organisational methods or standards, and controls and audits, that controllers and processors can apply to ensure the security of personal data.
Technical measures can be defined as the measures and controls afforded to systems and any technological aspect of an organisation, such as devices, networks and hardware.
