Professor Spierdijk: "Use the right price incentives to stimulate healthier eating habits"

Why is unhealthy food cheap and healthy food expensive? On her journey through the USA, economist Laura Spierdijk does not see a logical explanation. After all: cheap fastfood is also made of agricultural products, just as expensive fruit and vegetables. Spierdijk thinks the price of food is the key to simulating people to eat healthier. Economists should start researching if and how taxes and discounts can help to achieve this.
